“Banh mi chay” a.k.a Vietnamese sandwich with vegetarian fillings
►Ingredients:
**For vegan pate :
1 eggplant, sliced
100 g soaked white beans or lotus seeds (white beans make creamer pate)
10 cashew nuts or walnuts or almonds, soaked
Minced leek and lemongrass
1 tsp sugar
2 tsp soy sauce
1/2 tsp salt
4 tsp melted butter
**For the pickles
medium carrot Cut into strips
daikon radish Cut into strips
1 tsp salt
1 tsp vinegar
**Charsiew filling*
1 block tofu
3-5 sseitan or wheat gluten
1 tsp minced lemon grass
1 tsp minced leek
1 tsp char siu powder
1 tsp vegan oyster sauce
2 tsp water
1 tsp sugar
1/2 tsp salt
1/2 tsp pepper

When you say cooked lotus seeds, were they boiled or roasted?
BTW not to be nitpicking but this recipe is not exactly vegan if your recipe is called for margarine (as in this case on your pate). Unless the margarine you had used was also vegan because most margarines sold on the market were made from dairy products.

Vietnamese cuisine is one of my favorites, having grown up eating it thanks to my mom, and it's one I was afraid to miss when I went vegetarian. I have of course since then been proven wrong since I regularly still eat vegan Vietnamese dishes and I love that you're veganizing them! I would love to see your take on vegan Bun cha !
