Cream Cheese Garlic Butter Bun (Helen’s Recipe)
Bread:
80g Bread Flour
85g All Purpose Flour
30g Powdered Sugar
2g Instant Yeast
30g Unsalted Butter
1 Egg Yolk
1g Salt
70ml Milk
30ml Water
Method:
Mix all the dry ingredients. Combine with the wet ingredients. Machine knead into a dough
Remove & hand knead dough for a few minute till it’s stretchable
Make into a smooth ball & leave into bowl to rest for 45 minutes to 1 hour, covered
When it doubles in size, take it out & lightly knead into a log
Divide into 3 pieces each weighing 108g
Flatten it out & fold inward & roll into a ball with your palm
Put onto a non-stick baking tray or lined with parchment paper & rest for 30mins
Spray with water. Then bake in a pre-heated oven at 185°C for 15 mins
Half way through the baking rotate the tray
Take out from oven & leave to cool
Cream Cheese Filling:
100g Cream Cheese (room temperature)
1 Tbsp Powdered Sugar
25g Whipping Cream
1 tsp Lime Juice
Method:
Cream the cream cheese. Add the sugar then the whipping cream.
Beat till light & fluffy & smooth. Add the lime juice to balance out the richness
When it is well combined transfer into a piping bag & chill in the fridge
Garlic Butter Sauce:
80g Butter
25g Garlic (minced)
1Tbsp Honey
1Tbsp Cilantro/Parsley (minced)
Method:
Squeeze out the juice from the garlic
Melt butter in microwave 25sec
Add the minced cilantro, honey & garlic
Mix to combine
Putting it together:
Cut to split the bun into 6 wedges (base still attached)
Remove the cream cheese from the fridge and fill the inside of the bread
Brush the garlic butter sauce on the outside of the bun
More into the wedges
Bake at 175°C for 7-10 mins till golden brown
Enjoy!

I had made the bread but had substituted the powder milk for regular, and left out the water. I had also had to let it poof several times. The bread was dense but like regular garlic bread after the modifications. It had still tasted sooo good, and really took my mind off of what's going on. I had also added 1/4c of mozarella cheese and 1/2c of dried spinach. 🤩
So what happened to the butter? Didn’t see you put it in??
